Construction on this first class government inspected facility started in March of 2013 after much research and planning. Wayne Williment, owner of the shop, a licensed diesel mechanic gave up the back part of his shop to the future meat processing facility.
A rail system throughout the shop has been installed to avoid any heavy lifting. Proper vapour barriers and cooling systems were installed in meet code. There is no visible wood construction, everything is either plastic, PVC or stainless steel, everything was designed to provide the highest level of cleanliness and sanitation.
Hilltop Meats offers on-farm slaughter assistance. Van has been converted for use in assisted on-farm slaughter. It is insulated, has air conditioning and a complete fibreglass interior so it can be easy sanitized. When we arrive at the farm, after we have received notice from the veterinarian that an injured farm animal is fit and healthy for slaughter and consumption, we euthanized the animal on site, prepare the carcass, and then take it back to our processing facility. Arrangements can also be make to have the animal slaughtered and inspected at another facility, then released to Hilltop Meats to complete the aging and cut and wrap process.
